Chilli Chocolate Ice Cream
This ice cream is a world of contradiction in a single bowl! There are the cool, smooth, and luxurious taste and feel of sumptuous chocolate ice cream on the one hand, but on the other hand, there is a slightly sinister smack of chilli bite for surprise and balance.
Don’t think about it too much, you may just find this to be a memorable and deliciously exotic departure from regular chocolate ice cream.
There’s only 6 ingredients!
All you need to get the show on the road are the following six ingredients:
- 300 ml cup whole milk chilled
- 300 ml thick cream
- 6 egg yolks
- ¼ cup cocoa powder
- 175 g caster sugar
- 12 dried long chillies
But I don’t have an Ice Cream Maker!
You don’t need an ice cream machine to make this recipe. Of course, your life will be more simple if you have an ice cream machine.
You can make it with an ice cream maker if you have one too, it’s as simple as that.

Chilli Chocolate Ice Cream

- medium pot
- ice cream machine
- wooden spoon
- spatula
- mixing bowl
Ingredients
- 300 ml cup whole milk chilled
- 300 ml thick cream
- 6 egg yolks
- ¼ cup cocoa powder
- 175 g caster sugar
- 12 dried long chillies
Instructions
- In a saucepan, add milk, cream and chillies, bring to the boil. Set aside for until cool to infuse.
- In a bowl beat together the egg yolks and sugar until pale.
- Remove the chillies from the milk mixture, then carefully pour over the egg yolks.
- Return mixture to a clean saucepan. Add the cocoa and cook mixture on a low heat for 5 minutes, whilst stirring. The mixture will thicken. It’s ready when it coats the back of a spoon. Refrigerate for 30 minutes.
- Pour into an air-tight plastic container and place into the back of the freezer. Once frozen around the edges (about an hour or so), beat the mixture with electric beaters. Refreeze, then repeat 2 more times.
- Allow to freeze for 4-5 hours until set.
- While it’s worth it, this can be a little time consuming, so it’s very possible to try it with an ice cream maker too. Just replace all of the steps after “coating the back of the spoon” with place it in an ice cream maker.
