3 tbsp cocoa sifted
1 tbsp milk
Ganache:
200 ml thin cream

The cake tin is quite important. Beside to use the right sized one otherwise the cake will not cook correctly. If the cake tin is too small, the cake will not cook fully in the centre before the outside is cooked. If the cake tin is too large, the cake will be too thin and cook more quickly. You experiment with different sizes, but this recipe gives a guide for 22cm.

Preheat oven to 180 degrees. In a saucepan, melt butter, then add chocolate, sugar and water, stirring for 3 minutes. Transfer to a bowl to cool for 10 minutes. Once cool, add eggs, sifted flours and cocoa, stir. Pour into two lined 22cm cake tins.
Bake for 90 minutes. Cool in the tin for 10 minutes, then set on a rack.
Using an electric mixer, beat butter for 5 minutes until pale and fluffy. Add icing sugar and cocoa, 1 tbsp at a time, until it’s dissolved. At the end, add the milk, beat thoroughly. Using a flat implement, cover the cake in the chocolate buttercream. It can be smooth or rustic.
Place cream in a small saucepan on medium heat. Once the cream is hot (just under boiling), pour it over chocolate in a bowl. Stir the chocolate until it is melted and smooth. Allow the ganache to cool for 10 minutes, then pour over the cake. Decorate the cake with strawberries and grated chocolate.
