Sift to combine salt and flour into a medium mixing bowl. Add yogurt and mix to form dough. It will seem like it won’t come together at first, but persist, it will work! Once the mixture resembles a bowl of pea sized globs, you can gently press it together using your hands.
Don’t knead like regular dough, light work will keep the flatbread light too. Roll the dough into a sausage shape so it’s easier to divide into equal sized portions.
Start heating the fry pan to medium. Divide into 6 portions and roll into balls.
Roll the dough balls one at a time into flat circles around 25cm in diameter, or less if you prefer them thicker.
Add the flattened dough circle into the heated fry pan and cook gently until bubbles start to appear in the top. (about a minute or so) The flip the flatbread and cook the other side for about a minute too.
While each flatbread is cooking, roll out the next one. Before long you’ll be a flatbread machine pumping out delicious carb circles to the amazement of everyone!
After all the flatbreads are cooked, you can serve immediately, or store in a plastic bag to use later. They can be reheated in a pan or briefly in a microwave if you want them warm.
