750gchicken breastchopped
7garlic cloves
6Thai chillies
3tbspvegetable oil
3tspoyster sauce
2tsplight soy sauce
2tspdark soy sauce
1tspsugar
1cupThai holy basil
4rice paper wrappers
1cupsnow peas
Oil for frying
Instructions
Using a mortar and pestle, grind together the garlic and chillies to release the flavours.
In a small fry pan, place about รณ cm of oil in the bottom of the pan. Heat on medium heat, then cook each rice paper wrapper, about 15 seconds each, set aside.
Using a wok, heat 3 tbsp vegetable oil until hot, add the garlic and chilli mixture, cook for 20 seconds.
Add in chicken and snow peas, stirring continuously for 4-5 minutes. Then add oyster sauce, light soy, sugar and dark soy, stirring for 30 seconds.
Finally, add the basil, mix until basil is wilted, about 20 seconds. Serve with crispy rice paper and extra chilli if desired.
