800gchicken breast fillets
Place chicken between 2 pieces of cling wrap, smooth the meat with a mallet until they are 1.5cm thick.
Combine together in a bowl: 1 tbsp peanut oil, yoghurt, lime juice and garlic, mix, then add chicken and combine thoroughly. Set aside.
In a bowl add: coriander, cumin cardamom, nutmeg, paprika, cayenne and ginger. Using a heavy based pot on a high heat, add the butter and onion, then cook until light brown, about 5 minutes. Reduce to a moderate heat, then add the spice mix, passata, water, cream and salt. Simmer for 10 minutes.
Using a skillet on high heat, add the remaining peanut oil and cook the chicken until browned well on both sides, about 6-8 minutes.
Be careful not to char the chicken too much.
Once cooked, cut the chicken into large chunks then add to the sauce, cook for 5 minutes. Serve with rice and naan bread.
